In an effort to calm my cravings, I happily whipped up a batch of these good-for-you (well, less bad-for-you) treats. A quick substitution of egg whites instead of whole eggs, and no-sugar-added apple sauce instead of oil, makes cupcakes that are just as yummy. Anyway, these cupcakes aren't anything special. They're just your everyday french vanilla with cream cheese frosting (thank you betty!). I have to say, though, they are such a nice treat on a lazy Saturday afternoon. I'm well aware that I should tone it down with "cupcakes this" and "cupcakes that". So whatever happens next on this blog, I cross my heart, won't have anything to do with cupcakes. well, at least not directly :)
