Welcome!

Welcome! Thanks for stopping by! This blog was created to document the sweet and simple days before our upcoming wedding, as well as the days that will follow into marital bliss. 50 years from now when we're old and gray, we can look back at this blog and remind ourselves of reasons to laugh and love, and of our life together--sweet & simple.

What's cookin'?

Some of my fave things to do include cooking and baking.  My efforts don't always turn out as planned or hoped, but luckily for me Marco is not a picky eater.  Or it could just be that he's a really good husband who will eat my cooking regardless.  Hah, probably both.  Here are some pics of our most recent vegetarian eats!

Sweet Chili & Lime Tofu Stir-fry and Brown Rice  (Thanks, Mal for the recipe!)
Sweet Potato & Onion soft tacos with sauteed cabbage, corn and avocado
Noodles with Zucchini, Sweet Peas, Arugula and Parmesan Cheese
One of our wedding gifts was an awesome bread maker! Carbs, carbs, carbs...
Love it when the smell of bread in the oven fills the house! Mmmm...
We haven't had too many cold winter days yet in 2012, but when the weather starts to get the slightest bit
chilly, soups make for a great dinner.
On the left: Veggie Noodle Soup.
On the right: Vegan Chili. Yes, it exists. And yes, its yummy...especially with a side of cast-iron skillet cornbread!

While we were in Spain, we had THE best crepes (the only crepes) we had ever tasted.  My attempt to recreate them at home includes this one filled with Nutella.  Had we had bananas at the time, they def would have been invited to the party.
A great feature of my...ahem, our...bread maker is the simple dough feature.  Throw in some ingredients and the possibilities are endless.  Since cinnamon is a staple in our pantry, I made some Cinnamon Coffee Cake!
Can't have coffee cake without some coffee...and a scoop of vanilla ice cream of course! ;)
